Why does my total channel capacity doesn't match the amount of funds on my Bitcoin node?
When I look at my Umbrel, I have 1M satoshis on channels, but when I look at my node on 1ML or Amboss it shows 2M SATs. How is this possible?

You total channel capacity on 1ML or Amboss shows the total amount of liquidity including both inbound and outbound on your channels, regardless how much funds there are on your side of the channels.
Your Bitcoin Lightning Network node's wallet shows the amount of Satoshis you have on your side of the channels. The maximum amount you can spend.
In your example you may have two 1M SAT channels, making it a total of 2M SAT node capacitity. However, you only have a total of 1M SATs in total on those two channels, which is what you wallet shows.
