Can I allocate more than the requested amount?

In the interest of coin control, I'd like to use a full UTXO. If I join a 2m sat swap and open a channel for 2.25m, will that be an issue?

It's not an issue in my view. It doesn't break any symmetry or anything like that. The more SATs in the channel the merrier. There is no disadvantage to larger channels that I know of.
